Pumpkin Pancakes
Yes. It's pumpkin season. And with that comes pumpkin... everything.
Why not pumpkin pancakes for a crisp, fall morning?
These guys are worth making. Just ask my husband who volunteered to "take one for the team" and finish off the last pancake this morning. So servant-hearted...

Pumpkin Pancakes

Serving size: 4 (makes about 12 pancakes or 7 - 8 generous size)
Ingredients:
1 and 1/2 cups flour
3 tsp. baking powder
1 tsp. salt
1 tbsp. sugar
1 tsp. pumpkin pie spice
1 and 1/4 cups milk
1 egg
3 tsp. butter, melted
2 tbsp. pumpkin
1 tsp. vanilla
Directions:
Combine flour, baking powder, salt, sugar, and pumpkin pie spice in a large bowl; mix.
Stir in milk, egg, melted butter, pumpkin, and vanilla; whisk together.
Meanwhile, heat up large skillet on stove and grease (mmm butter).
Using 1/4 cup (or larger), scoop pancake batter onto skillet. Flip once bubbles begin to appear.
