Reese's Cookies

It's the holiday season!

I'm sure you already knew that... I just wanted to remind you :)

This is my favorite time of year because everyone is in such great spirits, there are baked goods galore, christmas music is nonstop, and there are pretty sparkling lights. Even though there are finals, at least there is something to look forward to at the end! (A break from classes?!-I know that's what you were thinking... just kidding! It's the holidays!)

So I have one more final (on Friday), and it couldn't come fast enough. Yes, with all this extra time to prepare for my last final, you think I'd spend my time studying, right? Oh yes, that's what I originally told myself too... but (un)fortunately, I decided to spend my time doing this.

Baking.

Typical. Now, I'm just going to have to hop on the bandwagon of cramming before finals... but oh well. At least I'll have company in the library?

These cookies are addicting. Don't say I didn't warn you. My mom makes them every year at Christmas time, and I decided to spread a little holiday cheer to all my friends and sisters studying for finals. And to you too of course!

Here's the recipe!

Reese's Cookies

Ingredients

1/2 cup butter or margarine, softened

1/2 cup sugar

1/2 cup brown sugar

1/2 cup peanut butter

1 egg

1/2 tsp. vanilla

1 1/4 cup all-purpose flour

3/4 tsp. baking soda

1/2 tsp. salt

2 bags mini Reeses Peanut Butter Cups

Directions

Preheat oven to 375F.

Cream butter and sugars together.

Add egg and vanilla.

Mix in flour, baking soda & salt.

Form into 1 inch balls and place into ungreased mini muffin tins.

Bake for 8-10 minutes.

As soon as cookies have baked, remove from oven and immediately place an unwrapped mini Reese's Peanut Butter Cup in center of each cookie and press down.

Let cool before removing cookie from pan (but really, wait. The Reese's becomes very melty and cookie will lose its shape!- I recommend using 2 muffin tins for this reason)
