Pumpkin Spice Latte

It's the day after Thanksgiving.

In my house, that means we'll be eating leftovers for the next two weeks. It also means we'll be starting to decorate for Christmas before I even wake up (aka my mom starts decorating.)

It's a new house, which means we can't put our Christmas decorations in the old regular spots... I think this is stressing my mom out a little bit. Where are we going to put everything? A new place for every decoration?! Ahh!

Just kidding. I'm excited. I think my mom is excited too.. except that she keeps finding things that were broken (RIP Wooden Christmas Tree Trio) or mislabeled from the move. "What the heck?! The box says snow globes but it's filled with NASCARs!" It's going to be a long day...

Before I can fully indulge in the Christmas Spirit and start decorating... I have to commemorate Thanksgiving by making one last pumpkin thing...

Okay: 1. Who am i kidding? I"m probably going to be baking with pumpkin again... maybe even today and 2. Pumpkin still applies to this holiday, right? At least Starbucks thinks so...

Anyway, this drink is for you! A homemade Pumpkin Spice Latte :)

Here I thought it was going to be this intricate, better-do-it-just-right-or-you'll-mess-it-all-up kind of drink making... but it wasn't at all :) I think the difficult part is the espresso... but I used coffee, instead, and it still tasted yummy!

Pumpkin Spice Latte

Servings: 2

Ingredients

2 cups milk (I used skim)

2 tbsp. canned pumpkin puree

1 - tbsp. sugar

1 tbsp. vanilla extract

1/2 tsp. pumpkin pie spice

1/2 cup strong hot coffee (or however much coffee you like, really)

Whipped cream (if you'd like!)

Directions

Combine milk, pumpkin, and sugar in a medium saucepan over the stove until warm-hot (but not boiling!).

Remove from heat and add vanilla and pumpkin pie spice; mix together.

Brew a 1/2 cup of coffee (thank you Keurig) and pour half of milk mixture into cup; stir together.

Top with whipped cream and enjoy!

*This is my first official attempt at making a drink... and I think it turned out pretty well! The next drink I want to try is a gingerbread chai latte... it literally tastes like Christmas in a cup. If you don't believe me... I really recommend trying one at Starbucks... today. It's addicting. Get ready.
