Pumpkin Oatmeal Chocolate Craisin Cookies
Wow, what a mouthful.
Pumpkin + Chocolate + Oats + Craisins. Pretty good if you ask me :)
This cookie tastes like the holiday season: tart from the craisins, moist from the pumpkin, chocolatey and rich... mmmm :)

Pumpkin Oatmeal Chocolate Craisin Cookies
Ingredients
2 cups all-purpose flour
1 tsp. baking soda
1 1/2 tsp. cinnamon
1/4 tsp. ginger
1/8 tsp. nutmeg
1/8 tsp. allspice
1/8 tsp. cloves
1/2 tsp. salt
1 cup (2 sticks) unsalted butter, softened
1 cup brown sugar
1 cup granulated sugar
1 cup pumpkin puree
1 large egg
1 tsp. vanilla
1 1/2 cups old-fashioned oats
1 cup semi-sweet chocolate chips
1 cup craisins
Directions
Preheat oven to 350F.
In a large bowl, mix together butter and sugars until light and fluffy; mix in pumpkin, egg, & vanilla.
Gradually add flour mixture (flour, baking soda, & spices) until all ingredients are incorporated.
Stir in oats, chocolate chips, and craisins.
Drop by rounded tbsp-fuls onto lined baking sheet (either with parchment paper or silicone baking mat).
Bake for about 10-12 minutes.
