Pumpkin Cookies!

Don't really need to say much. They're absolutely addicting, and you need to bake them. Now.

Also, they probably lasted for only about 1 hour at KD before they were all gone. This shows just how great they are :)

Really these cookies are perfect for this time of year! They got me really excited for Thanksgiving, and now I can't wait for Thanksgiving Break! Enjoy!

Pumpkin Cookies with Cream Cheese Frosting

Ingredients

2 1/2 cups all-purpose flour

1 tsp. baking powder

1 tsp. baking soda

2 tsp. cinammon

1/2 tsp. nutmeg

1/2 tsp. cloves - I didn't have cloves, so I just added ~pinch more nutmeg!

1/2 tsp. salt

1/2 cup (1 stick) butter, softened

1 cup sugar

1/2 cup brown sugar

1 1/4 cup canned pumpkin (~1 can)

1 egg

1 tsp. vanilla

Directions:

Preheat oven to 350F.

In a large bowl, combine flour, baking powder, baking soda, spices & salt; set aside.

In another large bowl, cream together butter and sugars.

Add pumpkin, egg, & vanilla; stir in pumpkin until just combined.

Add dry ingredients.

Drop by rounded tsp-fuls (for smaller cookies!) on a greased cookie sheet.

Bake for ~10 minutes; allow to cool before frosting!

Frost cookies with cream cheese frosting (I just used store bought!)
