S'more Cookie Bars

Clearly... I love S'mores too much. Observe: S'more Cookies, S'more Sandwich Cookies, S'more Bars, & S'more Granola Bars.

Seriously?! ... I didn't even realize I was this obsessed with S'mores.

I think it's the marshmallow... I love marshmallows in S'mores. They're what make it taste so good... same with the graham cracker. It's king of funny how much I like S'mores, because I don't really like chocolate that much (crazy, I know)... but for whatever reason, S'mores are the exception.

SO in honor of my crazy S'more baking business on my blog, what did I do?

I combined S'more recipes!

S'more Cookies + S'more Bars = S'more Cookie Bars!

It's like combining chocolate chip cookies with S'mores.

They're a bit messy and gooey, but they're addicting!

Here's the recipe!

S'more Cookie Bars

Ingredients

~8 Graham Crackers

1/2 cup butter

3/4 cup packed brown sugar

3/4 cup sugar

2 large eggs

1 tsp. vanilla

1 tsp. salt

3/4 tsp. baking soda

2 1/4 cups all-purpose flour

1 12oz. bag semisweet chocolate chips

6 Hershey Bars

1 12oz. bag mini marshmallows

Directions

Preheat oven to 350F.

Layer bottom of 13x9inch pan with graham crackers (I used 7 3/4).

In a large mixing bowl, combine butter and sugars.

Add eggs & vanilla. Mix.

Add salt, baking soda, & flour to large bowl.

Stir in chocolate chips.

Press cookie dough into baking dish lined with graham crackers (It's helpful to press cookie dough on a piece of plastic wrap, then flip it over onto graham crackers).

Bake for 20 minutes.

After cookie has baked, top with 6 Hershey Bars and mini marshmallows.

Set oven to broil and place back in oven until tops of marshmallows are golden (warning: this only takes about 2 minutes!)

Allow to cool before cutting into bars. Enjoy!
