Cleaning Out the Pantry

It's officially official: my parents have bought a home in Texas, and movers are coming to start packing up our things THIS SATURDAY! With that said, my mom is going on a cleaning binge, cleaning out anything and everything before the move. She has also given me the responsibility of cleaning out the baking shelf of the pantry since we can't move anything that has been opened (hence flour, sugar, brown sugar, baking soda... aka everything you bake with). Of course I couldn't be more excited - but it didn't take me that long before an ingredient ran out. It was the flour... but at least it got me through two batches of cookies!

First I made some Apple Oatmeal Raisin cookies, then these...

Mint chocolate chip ice cream cookies!

My brother asked me to make Chocolate Chip Ice Cream Cookies... but we didn't have any vanilla ice cream. So I tried it with mint chocolate chip!

I was afraid they were going to turn out some weird, unappetizing shade of green, but they didn't! They actually look very similar to the chocolate chip ones. But they taste like mint ice cream! Just try them :)

Mint Chocolate Chip Ice Cream Cookies

Ingredients

2 sticks butter, softened 1 cup granulated sugar 3/4 cup packed brown sugar 2 large eggs 1 1/2 tbsp. pure vanilla Overflowing 1/2 cup mint chocolate chip ice cream (straight from freezer) 4 cups all-purpose flour 1 tsp. salt 1 bag chocolate chips Directions Preheat oven to 350F. Cream butter and sugars until fluffy in large bowl. Add eggs and vanilla; Mix in ice cream. Place flour, baking soda, and salt in medium bowl; mix. Add flour mixture to wet ingredients along with chocolate chips and mix. Scoop dough onto a lined baking sheet and bake for 9-11 minutes. Allow to cool before transferring to a cooling rack.
