Did you know today is October, 10, 2010?
10.10.10!!!!
This would be the sweetest day to be born. One of the sweetest at least.
But anyways, since I baked with pumpkin twice today, I figured I should just bake three times, in honor of 10.10.10, of course :)
So... I made some pumpkin bread!

I found a recipe that makes two loaves, but you can always half it if you need just one!
The bread is really moist and pumpkiny (if that is a word?!) Perfect for fall!

Chocolate Chip Pumpkin Bread

Ingredients (for two loaves!)
3 1/2 cups all-purpose flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tbsp. cinnamon
1 tbsp. nutmeg
2 1/2 cups granulated sugar
4 large eggs
1 cup canola/vegetable oil
1 15-oz can pumpkin puree
1 tsp. vanilla
1 (16-oz) package semi-sweet chocolate chips
Directions
Preheat oven to 350F.
Grease two 9x5x3 inch bread loaf pans.
In medium-sized bowl, combine flour, baking powder and soda, salt, cinnamon, and nutmeg. Set aside.
In a large bowl, mix sugar, eggs, oil, pumpkin, and vanilla until combined.
Gradually fold in dry ingredients to wet until all is incorporated; Stir in chocolate chips.
Pour mixture evenly into two loaf pans; Bake for about 60 minutes (check to make sure toothpick comes out clean).
Allow to cool and enjoy!
