Milk's Favorite Cookie
There's something about Oreos and milk together that tastes so good...
Andd there's just something about a homemade cookie that tastes so good too...
So why not put the two together? Homemade Oreos, anyone??
I know what you're thinking... two posts in one day...
In my defense, these homemade Oreos (unfortunately) didn't stay long at my house. They were for my brother and his XC team's pasta dinner.
So it's like I didn't even bake, right? :)
Even though these guys took a little bit longer to make, compared to regular drop cookies (because you had to assemble them), they are SO WORTH IT. They really do taste like Oreos. Homemade Oreos ;)

Homemade Oreos
Ingredients
Cookie:
1 1/4 cups all-purpose flour
1/2 cup cocoa powder
1 tsp. baking soda
1/4 tsp. baking powder
1/4 tsp. salt
1 1/4 cups sugar
1/2 cup + 2 tbsp. (1 1/4 sticks) unsalted butter, softened
1 large egg
Filling:
1/4 cup (1/2 stick) unsalted butter, softened
1/4 cup vegetable shortening
2 cups sifted confectioners (powdered) sugar
2 tsp. vanilla extract
Directions
Preheat oven to 375F.
Mix flour, cocoa, baking soda, baking powder, salt, and sugar together in a large bowl.
Add butter and then egg until dough comes together.
Take rounded tsp-fuls of dough and place on ungreased cookie sheet (lined with parchment paper!); Carefully flatten dough with hands.
Bake cookies for 8 minutes.
While cookies are baking/cooling, start to make filling.
Mix together butter and shortening in mixing bowl; gradually beat in sugar and vanilla; beat for about 2-3 minutes until filling is light and fluffy.
Assemble Oreos by piping filling (about the size of a tsp.) in between two cookies and sandwich together.
