White Chocolate Coconut Cookies

I have a question for you...

How do you procrastinate?

Clearly... I love to bake...

Why would you want to do stoichiometry and solve chemical equations.. when you could do this?

Reasons why baking so much better than chemistry:

1. It is wayy more fun than balancing equations

2. It makes your apartment/house/wherever smell good

3. It tastes good, too :)

So why not bake instead of do homework, right?

... I mean that's what I tell myself at least.

These are White Chocolate Coconut Cookies, and I adapted the recipe from Paula Deen herself (http://www.foodnetwork.com/recipes/paula-deen/white-chocolate-coconut-cookies-recipe/index.html).

I ended up changing the recipe a little... and added 3/4 white chocolate chips in the cookie dough itself, in addition to the white chocolate and toasted coconut on top.

The recipe wasn't difficult to follow at all, and they turned out delicious! (The cookie dough too- trust me, I had to try it :))

Here's the Recipe!

White Chocolate Coconut Cookies

Ingredients

1 cup (2 sticks) butter

1/2 cup brown sugar

1 tsp. baking powder

1 tsp. baking soda

2 1/4 cup all-purpose flour

1/2 tsp. salt

1 egg

1 tsp. vanilla

1 cup oats

3/4 cup shredded coconut

3/4 cup white chocolate chips

For garnish:

about 1/2 cup melted white chocolate

about 3/4 cup toasted coconut

Directions

Preheat oven to 350F.

Beat butter and brown sugar in a large bowl until well combined.

Add flour, baking powder, baking soda, and salt to mixture and combine.

Add egg and vanilla.

Mix in oats, coconut, and white chocolate chips.

Drop by tsp-fuls onto an ungreased cookie sheet and bake for about 10 minutes.

After cookies are completely cooled, melt white chocolate over stove in a double-broiler.

Drizzle white chocolate over cooled cookies and top with toasted coconut (don't forget to toast the coconut!)
