Apple Oat Raisin Bread

I love Mondays. Especially when they are rainy and grey...... okay, maybe not so much.
Today is one of those days where you can watch movies all day and never move off the couch, and feel okay about it because the weather outside is not much better. You could literally sleep all day. Or, if you can't sleep in past noon (i.e. me) you can bake! Which is what I did.
Apple-Oat Raisin Bread, anyone?
Raisins, apples, oats and spices all in one slice of bread. Mmmm.
Since this is a quickbread recipe, no yeast is needed. The recipe is relatively simple and once it's in the oven, you're done!

Apple-Oat Raisin Bread
Ingredients
1 1/2 cups all-purpose flour
2 tsp. baking powder
1/4 tsp. baking soda
1 tsp. salt
1 1/4 tsp. cinnamon
1/4 tsp. ground nutmeg
2/3 cup packed brown sugar
1 cup rolled oats
1 1/2 cups chopped apple
1/4 cup chopped walnuts
1/4 cup raisins
2 eggs
1/4 cup milk
1/4 cup vegetable oil
Directions
Preheat oven to 350F.
Grease and flour an 8 1/2 x 4 1/2 in. loaf pan.
Combine flour, baking powder, baking soda, salt, cinnamon, nutmeg, brown sugar, and oats in large bowl.
Add apple, nuts, raisins, milk, and oil.
Mix until dry ingredients are moistened.
Sprinkle with oats and bake for about 55 - 60 minutes; Cool on wire rack.
