Would You Like S'more Cookies?

First Year is officially over.

And to celebrate... S'mores?

Close... but try again.

How about... Campfire Cookies!?

Feel like a S'more but don't have a campfire? Make some cookies!

Okay. That was cheesy. But these really do taste like s'mores.

While procrastinating for finals, instead of times when I should have been studying, I bookmarked cookie recipes. Yes, I know... but I did.

Anyways, I ran into these cookies, courtesy of Martha Stewart, and I HAD to try them.

So I did.

Graham cracker cookie + Hershey's chocolate + gooey marshmallow = who even needs the campfire?

The best part about it all... they look like they would take forever to make.. but they are super easy!

Here's the recipe! And happy baking!

Campfire Cookies

Ingredients

1/2 cup oats

2 cups all-purpose flour

3/4 tsp. ground cinnamon

1/2 tsp. baking soda

1/2 tsp. salt

1 cup (2 sticks) unsalted butter, softened

3/4 cup light brown sugar

1 large egg

About 4-5 Hershey bars

About 25 large marshmallows, halved

Directions

Preheat oven to 350F.

In a food processor, pulse oats until finely ground.

Add flour, cinnamon, baking soda and salt; pulse to combine.

In a large bowl, beat butter and sugar until light and fluffy; add egg.

Beat in flour mixture on low until combined.

Form dough into 1 inch balls and place on ungreased cookie sheet.

Place a piece of chocolate on top of each cookie and bake for about 8 minutes.

Take out of oven, place marshmallow half on top of chocolate, and bake for 1 minute (until marshmallow gets gooey).

Cool on cookie rack.

Makes about 50 cookies.

Tip: I added 2 graham crackers in the cookie dough mixture, don't know if it changes much, but I think it made the cookie more "graham-crackery".

Also, for a healthier option, you can substitute 1 cup of the all-purpose flour for whole wheat.

One last thing... my sister suggests microwaving the cookie for about 15 seconds. Mmmm :)
