Great Day Granola
I love packages in the mail. They're the best. Especially when they are from one of your best friends.. who knows you WAY too well... and gives you these..
baby cook books! I love Kelsey Londregan. It was the best Valentine's Day present ever.. but also the worst. Worst because it was torture knowing I couldn't bake anything from these baby cook books... until I went home for the weekend of course :)
So what was one of the first things I did when I got home? Baked cookies? How did you know?
Instead of baking cookies though, like usual, I decided to try something different.
Granola.
I took this recipe from the Pillsbury Breakfast & Brunch baby cookbook and changed it a little. I've tried to make granola probably for the past 2 years now.. and my problem was I could never get the ingredients to stick together. I tried honey, corn syrup, and a combination of both.. but always had a hard time making the granola clump together like it should.
So I decided to try this recipe.
It's called "Great Day Granola", and is made up of oats, fiber one cereal, golden grahams, and nuts. I added some extra ingredients, like raisins, craisins, and walnuts, and the finished product was delicious :)
This granola would be great with yogurt, as cereal, by itself as a snack, or even on top of ice cream. Delicious.
Great Day Granola
Ingredients
4 cups oats
3 cups Golden Grahams cereal
3 cups Fiber One cereal
1 cup chopped walnuts
1 cup sliced almonds
1 cup packed brown sugar
1/2 cup canola/vegetable oil
1/2 cup honey
1/2 cup water
1/2 tsp. vanilla
1/2 tsp. almond extract
Directions
Heat oven to 250F.
Spray 2 (15x10-inch) pans with cooking spray.
In large bowl, mix oats, cereals, walnuts, and almonds together.
In a saucepan over medium-high heat, cook brown sugar, oil, honey and water for 3-5 minutes, stirring constantly, until brown sugar is melted.
Remove from heat and stir in vanilla and almond extract.
Pour over cereal and mix until well coated.
Spread mixture evenly in pans.
Bake 1 hour, rearranging pans once halfway through baking. Cool completely in pan (about 1 hour) then break into pieces.
** This recipe makes quite a lot of granola. I would recommend halving the recipe unless you're baking for a large number.
