Chocolate Chip Oatmeal Cookies
So it's been a while.... only because now being back at school I have a MILLION things to do... which leaves no time for baking :(
But... since there really isn't an oven, being at school and all..... I don't feel as bad.
Anyways. No cool pictures or anything... but here is a recipe that will never fail.
Chocolate Chip Oatmeal Cookies.
I think these are a good choice to bake when it's raining outside... or freeziinngg cold, like today. Best from the oven, the chocolate is melty, the cookie is still a little gooey from not being completely cooled, and they're just amazing. Mmmmmmmmm :)
You can even add a little more crunch to the cookie by adding in nuts, too. My favorite are walnuts, but pecans would work just as well.
These cookies make the house (or wherever you're baking) smell soooo good, and they warm you up too when you're just a little chilly from being outside. Best part of all, they are well worth the entire process of waiting for them to bake. Completely worth it.

Chocolate Chip Oatmeal Cookies
Ingredients
1 cup butter, softened
1 cup packed light brown sugar
½ cup white sugar
2 eggs
2 tsp. Vanilla extract
1 ¼ cups all-purpose flour
½ teaspoon baking soda
1 tsp. salt
3 cups quick-cooking oats
1 cup chopped walnuts
1 cup semisweet chocolate chips
Directions
Preheat oven to 325F
Cream together the butter, brown sugar, and white sugar until smooth in a large bowl. Beat in the eggs one at a time, then stir in vanilla. Combine the flour, baking soda, and salt; stir into the creamed mixture until just blended. Mix in the quick oats, walnuts, and chocolate chips. Drop by heaping spoonfuls onto ungreased baking sheets.
Bake for 12 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to wire rack to cool completely.
