Spice Up Your Life...
... with some Cranberry-Raisin Spice Bars, perhaps?
Super easy to make, these bars would be the perfect pairing to a cup of coffee (or tea), while sitting on the deck and taking in the sun on a Saturday morning :)
Which is what I wish I did this morning... but no, wayy too lazy.
Packed with cinnamon, nutmeg, and all kinds of spices, these bars definitely have lots of flavor without being too overwhelming. They sort of remind me of autumn... around Thanksgiving time... with the leaves falling off of the trees... and apple cider.... well, just keep these guys in mind once fall rolls around... because with the way time is flying these days, Thanksgiving will be here before we know it!
But anyways, what makes these cranberry-raisin spice bars so good (at least to my sister and I) is that they kind of have the consistency of a quickbread, but are in a cookie bar form!
Mmmmm. So here's the recipe.
Cranberry-Raisin Spice Bars
Ingredients
1/2 cup vegetable oil
1 cup granulated sugar
1 large egg
1 3/4 cup all-purpose flour
1/4 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. allspice
1/4 tsp. ground cloves
1/4 cup chopped walnuts
1/4 cup sliced almonds
1 cup mixed raisins and craisins
3/4 cup warm water
Directions
Preheat oven to 375 and grease a 13x9 inch pan.
Mix oil, sugar, and egg in large bowl.
In another bowl, combine flour, salt, baking soda, and spices.
Add flour mixture to large bowl.
Add raisins/craisins and nuts into bowl; mix in warm water.
Pour batter into pan and bake for about 20 minutes.
Cool before cutting.
