My Friends Harry & David
You may be friends with them too. During the holidays, they generously give you packages filled with Moose Munch and smoked salmon, mixed nuts, and the wondrous golden pear(s).
Pears. What do you do with them?
My family doesn't really eat a lot of pears. I think it's the texture. I feel bad when they just sit on the counter, though...
So I tried this recipe: Pear & Cranberry Crisp.
It seems to be making the pears disappear :)
Eat it warm with vanilla ice cream as dessert, or cold over greek yogurt for breakfast, I say it's pretty darn good.
Sadly, it doesn't photograph as pretty, but I tried.
Pear & Cranberry Crisp
Ingredients
1 cup dried cranberries
About 3 pears, cored and sliced
1 tsp. vanilla
¼ cup water
½ cup granulated sugar
1 ¼ cup flour
A generous ⅓ cup oats
¼ cup packed dark brown sugar
½ tsp. cinnamon
¼ tsp. salt
½ cup (1 stick) unsalted butter, melted and at room temperature
Directions
Preheat oven to 375F.
Toss cranberries, pears, vanilla, and ¼ cup granulated sugar together in a bowl with ¼ cup water. Set aside.
In another large bowl, with a fork, mix together the remaining ¼ cup granulated sugar, flour, oats, brown sugar, cinnamon, and salt.
Drizzle in the butter and stir with fork until mixture is crumbly and all flour is incorporated.
Spread fruit in an 8x8 baking dish.
Crumble and sprinkle crumb topping over fruit, breaking up any large crumbs.
Bake for about 40 minutes, or until the filling is bubbling and the topping is browned.
Serve as you'd like, and enjoy!
P.S. I'm officially home for the holidays. Let the baking begin!! :)
