Thank-FULL

I am thankful. Thankful for this pretty sweet experience of literally being able to touch the turf of the Dallas Cowboys/ Washington Redskins game, thankful to have seen Erin Andrews play with her hair about 5,000 times only to have it look the exact same as when she started before going on camera, and thankful for being able to realize that football players are actually huge. Most of all, I am thankful for the time I got to spend with my family, and the fact that I was able to share this experience with them! Thanks Dad!

Yes we were that close. It was pretty incredible.

I have to say, this was a Thanksgiving unlike any other. When my dad told me we had tickets to go to the Cowboys/Redskins game, I didn't think we were going to be sitting THIS close! We started off Thanksgiving with your typical Miller Lite Pregame (what?) where Todd actually won the raffle for a free t-shirt. It was pretty cool until 10 minutes later when everyone at the pregame was given the same free t-shirt... haha. One of my favorite moments of the day. Making it on the jumbotron was also another one of those moments. And seeing a mini Kenny Chesney concert.

This Thanksgiving was definitely one for the memory books, and I am so grateful to have been able to spend such a cool experience with the people I love the most.

And to make it even sweeter, we still got our Thanksgiving feast the next day with this apple pie :)

It really was a never-ending Thanksgiving. And I'm not complaining!

I have one last recipe to share with you, and it doesn't have to be for any special occasion like Thanksgiving, but rather any day! I just happened to make it the morning of Thanksgiving, and my thought behind it was that we all needed to eat something that day that was a little low carb, green, and healthy, right?

Something like quiche?!

And I'm not going to lie, this quiche is pretty tasty (and healthy!). So I thought I'd share :)

Mushroom, Spinach, Bell Pepper & Feta Quiche

Ingredients

  • 8 egg whites 1 3/4 cup skim milk 2 cups spinach 1/2 - 1 cup mushrooms (depending on your preference)

  • 1/2 - 1 cup bell pepper 1 Tbsp olive oil 1 Tbsp garlic powder 1 Tbsp chives 1/3 cup Feta cheese + some for sprinkling

  • 1 pre-made pie crust

Directions

Heat oven to 350.

Roll out pre-made crust and place in pie pan.

Bake pie crust for about 5 minutes or until lightly browned; remove from oven.

Heat olive oil in a skillet over stove.

Add bell pepers and saute for 3 minutes.

Add spinach, mushrooms and garlic powder; Saute until spinach is wilted.

Pour vegetables into pie pan and add 1/3 cup feta cheese.

Mix egg whites, milk and chives together in a bowl and pour over vegetables.

Sprinkle quiche with remaining feta cheese.

Bake 20-30 minutes until a knife inserted into center comes out clean.

One more funny moment from the game, and I think this is actually my favorite of them all. This poor guy only had one job to do, and I'm not sure if many people noticed this hiccup because it was during the halftime Kenny Chesney show.... but I noticed :)
