Apple Butter Banana Muffins
Procrastination ..at its finest.
Overripe bananas. Apple butter. Midterm.
What do these three things have in common?
Well... my house has overripe bananas that would probably otherwise go in the trash, my roommate has apple butter that she's been trying to get rid of for a while now, and I have a midterm I absolutely do not want to study for. Put them together, you get Apple Butter Banana Muffins!
Literally 10 ingredients. Super easy!

Apple Butter Banana Muffins
Ingredients
1 1/2 cups all-purpose flour
1 1/2 tsp. baking powder
1/2 tsp. cinnamon
1/4 tsp. baking soda
1/4 tsp. salt
2 eggs
3/4 cups sugar
1/2 cup mashed ripe banana (2 small)
1/2 cup apple butter
1/4 cup canola or vegetable oil
Directions
Preheat oven to 350F.
Grease or line muffin tin.
In a large bowl, combine flour, baking powder, cinnamon, baking soda, and salt.
Make a well in the center of the flour mixture and set aside.
In a medium bowl, combine eggs, sugar, banana, apple butter, and oil.
Add banana mixture all at once to flour mixture and mix together (batter should be slightly lumpy).
Spoon batter into muffin tins; about 3/4 full.
Bake for about 15 minutes or until edges are slightly browned.
Allow to cool before taking out of tins.
Recipe makes ~12-14 muffins.
