So Long Third Year & Banana Crumb Muffins
They don't really go together... but hey, why not celebrate the end of third year with some muffins?
It's crazy to think that so much has happened since my last post. So much so that I really haven't had the time to blog... I know, sad.
But, with the end of a school year and the beginning of summer comes free time to do nothing but bake!
At least until SEP starts :)
So, to catch up on what's happened since the bake off:
- Work. I kept working at SweetHaus, and we made some pretty cute stuff! There's something new everyday at SweetHaus. Seriously, you walk in and something is different. New fridge, new system, new layout. It's great :) Not to mention the consistent new challenge of an order. My last week there (before the summer) I made Mr. Potato Head and Hamm cake pops for a Toy Story birthday party. They were adorable! I'm really going to miss SweetHaus this summer.
- Finals. The bittersweet 2 weeks at the end of the semester. On the up side, all you have to do is study. On the down side, all you have to do is study. I was lucky this semester, as all of my finals were within the first week so I was doneee early! It was nice. As nice as finals can get I guess.
- Moving. Moved out of the KD house :( Talk about sad. Third year was such a great year- by far my favorite- and a lot of it had to do with living in the house. I have to say, I don't think I'll ever live with 30 other girls again, but it was so fun while it lasted!
- Graduation. Both my boyfriend and my sister graduated this year. Isaac graduated from UNC with a double major in Journalism and Religious Studies. It was really neat to see another school's graduation, and I'm kind of jealous that he's done with school already. My sister graduated from UVA and got 2 degrees at ONE time! It was pretty BA. She was also in the education school (like me!), which means she went to UVA for 5 years and graduated with her bachelor of arts in Psychology and masters in Teaching. It was really neat to see, not to mention got me really excited to graduate.. only two more years.
- Wisdom Teeth. Bye bye wisdom teeth! Up until this past Wednesday, I'd never had any type of surgery before. Being my first time under anesthesia, I've discovered that my body doesn't really like it very much. The first day was a little rough, but good news is that I'm feeling a lot better now!- minus the fact that I can't really eat solid foods. I dread the day I need anesthesia again...
And that's pretty much it! I cannot believe it's already May 26th. It is almost exactly 1 month until my 21st birthday... where has the time gone?!
Anyways, now that you're caught up with my life, I guess we can talk about these Banana Crumb Muffins.
Like I mentioned above, I got my wisdom teeth taken out Wednesday, so I haven't really been able to eat solid foods. My mom and I prepared for the sad, no solid foods diet by going to the grocery store and getting lots of yogurt and a lot of fruit. We kind of went overboard with the bananas I guess.. we got wayy too many. Whoops. They've started to turn brown real quick, so what was my solution? Bake, of course!
These banana crumb muffins are pretty simple- staple ingredients with some bananas, and there you go! All you need is a muffin tin and you're set!
This recipe makes a dozen regular sized muffins, and you can either make the recipe as suggested below, or spice them up with chocolate or cinnamon chips!

Banana Crumb Muffins
Ingredients
1 1/2 cups all-purpose flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
3 bananas, mashed
3/4 cup white sugar
1 egg
1/3 cup butter, melted
1/3 cup packed brown sugar
2 tbsp. all-purpose flour
1/4 tsp. cinnamon
1 tbsp. butter
Directions
Preheat oven to 375F.
Lightly grease a muffin tin, or line with liners.
In a large bowl, combine 1 1/2 cups all-purpose flour, baking soda, baking powder, salt, and cinnamon; set aside.
In a smaller bowl, mix bananas, sugar, egg and melted butter together until combined.
Pour banana mixture into flour mixture until just moistened; spoon batter into prepared muffin tin (I used an ice cream scooper here and it was perfect!)
In a separate, small bowl, mix together brown sugar, 2 tbsp. flour and 1/4 cinnamon.
Cut in 1 tbsp. butter until mixture resembles a crumble.
Sprinkle topping over muffins.
Bake for 18-20 minutes, until toothpick inserted into center of muffin comes out clean!
