TOO LONG.

Yes, that is how I feel right now.

It's been way too long since I last blogged. I don't know how I've survived this long, or what I've been doing. Actually, I do know what I've been doing (school, ew), it's just in no way as fun or as entertaining as baking.

But that all changed! Last night :)

UVA has a baking club, and I was looking for something to bake/bring for the meet & greet, and I stumbled upon these.

I absolutely love Joy the Baker. She's so great... and I kind of want to be her. Her recipes always seem so delicious and these cookies were so simple yet sounded so good, so I of course had to try them. And yep... I've decided that basically anything and everything Joy the Baker makes is going to taste absolutely amazing. Like these!

Brown Sugar Cookies.

They're just as she describes. You can think of them like chocolate chip cookies without the chocolate chips, or sugar cookies with brown sugar substituting for granulated. My sister described them as tasting like churros, and I think that description is a great fit too!

However you want to describe them, they're pretty tasty! And super simple!

Here's the recipe :)

Brown Sugar Cookies

Ingredients

2 cups all-purpose flour

2 tsp. baking soda

1/2 tsp. salt

1/2 tsp. cinnamon

1/2 tsp. ginger

1 1/2 sticks unsalted butter, softened

1 1/4 cups brown sugar

1 tsp. vanilla

1 large egg

Directions

In a large bowl, mix butter and brown sugar until light and fluffy.

Add egg & vanilla.

Add dry ingredients to butter mixture. Mix until combined.

Drop in rounded tsp-fuls on ungreased cookie sheet.

Bake for 8-10 minutes (until light golden brown on edges).

Allow to slightly cool before transferring to wire rack to completely cool.

*Recipe makes about 3 dozen cookies.
