Chocolate Chip Ice Cream... Cookies?!
Ice cream for the 4th of July!!!!!
But wait... aren't these... cookies?!?!
Yes! Ice cream cookies. It sounds weird. But once you try one... you'll understand.
They look like cookies, but taste like vanilla chocolate chip ice cream. And they're pretty addicting.
My friend sent me the recipe, and of course I had to try them! The ingredients are pretty much the same as a regular chocolate chip cookie, with the addition of 1/2 cup of vanilla ice cream!
It feels almost unnatural to add ice cream to cookie dough... and at first I thought it was just going to turn the dough into one big soupy mess. But it doesn't! It's crazy.... almost like magic :).
The recipe yields tons of cookies, too! They turn out really fluffy (definitely not flat like some chocolate chip cookies) and have a soft quality to them.

Chocolate Chip Ice Cream Cookies
Ingredients
2 sticks butter, softened
1 cup granulated sugar
3/4 cup packed brown sugar
2 large eggs
1 1/2 tbsp. pure vanilla
Overflowing 1/2 cup vanilla ice cream (straight from freezer)
4 cups all-purpose flour
1 tsp. salt
1 bag chocolate chips
Directions
Preheat oven to 350F.
Cream butter and sugars until fluffy in large bowl.
Add eggs and vanilla; Mix in ice cream.
Place flour, baking soda, and salt in medium bowl; mix.
Add flour mixture to wet ingredients along with chocolate chips and mix.
Scoop dough onto a lined baking sheet and bake for 9-11 minutes.
Allow to cool before transferring to a cooling rack.
*Makes about 3-4 dozen cookies
