Oatmeal Chocolate Raisin Cookies
Second Year is officially over!
It's Crazy!! Seriously, I feel like I am supposed to be going back for another semester. It went by way too fast. Ahh.
I'm not complaining, though, don't get me wrong! It's just crazy that time has flown by, but so much has happened! My spring semester started off with Recruitment 2011, getting the BEST nems of PC'11 ever, then Big Sis Week with my amazing little, BRAZIL for Spring Break, finding out my family was moving to Texas, and it went on and on until soon it was finals!
To celebrate the end of the year, I decided to bake some cookies!
I know, so out of the ordinary for me, but just look at how good these look.
And they taste great too :). My sister says they taste like Raisinets in a cookie. I think it that is the perfect description, and these cookies are the just the right combination of oatmeal, chocolate, and fruit, you can't eat just one.
Here's the recipe!
Oatmeal Chocolate Raisin Cookies
Ingredients
1/2 cup (1 stick) plus 6 tbsp butter, softened
3/4 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs
1 tsp. vanilla
1 1/2 cups all-purpose flour
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. salt
3 cups oats
1 cup raisins
1 cup chocolate chips
Directions
Preheat oven to 350F.
In a large bowl, combine butter and sugars until mixed.
Add eggs and vanilla; Mix in flour, baking soda, cinnamon, and salt.
Mix in oats until incorporated.
Mix in raisins and chocolate chips.
Drop by rounded tsp-fuls on an ungreased cookie sheet; Bake for about 8 minutes (until golden brown).
