Hot Chocolate Cookies
I love spontaneous trips home. They're always the best because they're unexpected, they're like an adventure, and even though I may not get all of my homework done for the weekend, at least I get some baking in :).
Although I would love to go home every weekend, I know it's not realistic. My sister completely agrees with me, too.. but sometimes.... going home for the weekend is just necessary.
It really is.
Lately, my sister and I have tried to rationalize with ourselves that going home is more than okay, especially since we won't be able to do so next year. Currently, driving home from school only takes about 2 1/2 hours - not bad at all- but next year.... it will be a plane ride. Literally... unless I would want to drive 20+ hours.
Yes, my family is moving to Texas.
This is some big news. Especially since I've lived in Virginia for 12 years now... and feel like I have pretty much grown up here. Although it's going to be a pretty big change for my family and I, I'm really excited! The move won't really affect me too much, seeing as I'll still be working and going to school in Charlottesville... so I'll still be in Virginia for a lot of the time.
It will affect my spontaneous trips home, though :(
So, all this means, really, is that I have to take the opportunities to go home as often I can ;) That way I can bake sweet cookies like these!
Do you love Hot Chocolate? I know it sounds kind of weird, but you should try these cookies. It's a twist on chocolate cookies... but instead of cocoa powder, use hot cocoa mix!
Throw some marshmallows in there (if you so fancy) and you're set!
Really they're as simple as that.

Hot Chocolate Cookies
Ingredients
2 sticks butter
1 cup sugar
2/3 cup brown sugar
2 eggs
1 tsp. vanilla
3 1/4 cup flour
1/3 cup hot chocolate mix
1 1/4 tsp. baking soda
2 cups marshmallows (either minis or regular cut up in fourths)
Directions
Preheat ove to 350F.
In a large bowl, cream butter and sugars together.
Add eggs and vanilla and mix until combined.
Slowly mix in flour, hot chocolate mix, and baking soda to form dough.
Add in marshmallows once dough is formed.
Drop by rounded tsp. onto lined baking sheet.
Bake for 10 minutes.
