Toffee Caramel Cookies
Hello there.
Long time no see.
Well, it's officially been 1 month since my last post... and let's just say that a new recipe is long overdue. ONE MONTH OVERDUE.
Anyway, I thought I'd try to make something new... to hopefully make up for this lack of baking that's been going on lately... not okay.
The beginning of the semester is always busy... move back in, get re-situated, get your schedule finalized, buy books, catch up with friends........ so much to do! Add in rush, and you can say goodbye to your pillow for a few days...
But it's worth it! Trust me, these sweet KDs are definitely worth it!
They really are the best. And so I figured... why not bake for them, right? :)

Baking with caramels can get a little sticky... but these cookies are definitely worth giving a shot! Crunchy, buttery toffee bits mixed in with soft, chewy caramels... mmmmmm :)

Toffee Caramel Cookies
Ingredients
2 1/4 cup all-purpose flour
1 tsp. baking soda
1 tsp. salt
1 cup (2 sticks) butter, softened
3/4 cup sugar
3/4 cup brown sugar
1 tsp. vanilla
2 eggs
1 package Heath Bar Toffee Bits
About 20 Kraft Caramels, cut into 1/4s
Directions
Preheat oven to 350F.
Cream butter and sugars in large mixing bowl; Add vanilla.
Mix in flour, baking soda and salt; Add eggs until just combined.
Mix in toffee bits and caramels.
Drop by tsp-fuls onto an ungreased cookie sheet.
Bake for about 9 minutes (until edges are golden brown).
Makes about 4 dozen baby cookies.
