Andes Mint Cookies
I love this time of the year... right after Thanksgiving, up until Christmas day. So much Christmas spirit and cheer, red and green, gift-giving, holiday parties, tree decorating, snow, baking, and my favorite... finals!!!
Okay, I lied. Finals are most definitely not my favorite. At all. Actually, I really can't stand them. But neither can anyone else...
So before I lock myself away in the library to study for the rest of my life ... I figured I would bake just one last time :) I had an excuse anyway... I mean my class was having an end of the semester party... and someone had to bring some cookies...
Plus, I found these Andes mint chips and had to make something with them.
So I made these :) mmmmmm.
Andes Mints in a cookie. Literally. A great recipe for this holiday season :) Enjoy!
Andes Mint Cookies
Ingredients
1/2 cup salted butter, softened
3/4 cup brown sugar
1/2 cup granulated sugar
1 tsp. baking soda
1 tsp. baking powder
2 tsp. vanilla
2 eggs
2 3/4 cup all-purpose flour
1 package Andes Creme de Menthe baking chips
Directions
Preheat oven to 350F.
Beat butter and sugars together.
Add baking powder, baking soda, vanilla, and eggs; mix.
Add flour; Mix in chips.
Form dough into about 1 inch balls; slightly flatten.
Bake on ungreased cookie sheet for 8-10 minutes.
