S'more Granola Bars
Graham crackers + chocolate + marshmallows + granola bar form = best idea ever.
Sooo I had to try it.
And this is how it turned out!
Mmmmm yummy.
As I started baking today, I remembered how I used the last of the chocolate chips in the Oatmeal Chocolate Raisin Cookies... and s'mores obviously have chocolate in them.... so I was in a dilemma. At first I thought I was going to have to make butterscotch s'more granola bars... and I'm not sure how great that would taste... but then I found...
hot fudge!
These bars are a little messy, but they are gooey, crunchy, and rich all at the same time. They're even better if served warm with a little bit of vanilla ice cream :) Yumm.
Here's the recipe!
S'more Granola Bars
Ingredients
6 tbsp. unsalted butter, chopped
1/4 cup light brown sugar
1/3 cup plus 1 tbsp. pure maple syrup
1/2 cup all-purpose flour
2 cups oats
1 cup graham cracker crumbs
1/2 cup sweetened coconut
1/2 tsp. salt
1/4 tsp. cinnamon
3/4 cup chocolate chips (or hot fudge)
1 1/2 cups mini marshmallows (or large marshmallows cut in half)
Directions
Preheat oven to 350F and grease 9x9in baking square baking pan.
Melt butter, brown sugar, and maple syrup in saucepan over medium heat; Stir occasionally.
Meanwhile, in a large bowl combine flour, oats, graham cracker crumbs, coconut, salt, and cinnamon.
Once sugar has dissolved, remove from heat and pour over mixture in large bowl; Combine until all dry ingredients are coated with butter mixture.
Press half of this mixture onto bottom of prepared pan and leave to cool for about 15 minutes.
Next, sprinkle chocolate chips (or spread hot fudge) evenly in a layer; Do the same with marshmallows.
Top with remaining crust mixture.
Bake for about 15 minutes; remove from oven and let cool before cutting into squares.
