Apple Oatmeal Raisin Cookies
The last time I baked something, summer had just began, I was living with AC, I had an oven so I could bake, and I had no idea what to expect with being a camp counselor for hormonal middle schoolers.
Well, a lot of time has passed since I last baked.
For one, it was my birthday. And I got this sweet present.
I know. A lime green kitchen aid!!! Best present ever. Not kidding. I was so excited when I got this package in the mail I can't believe it took me this long to actually use it.
But I eventually did! Today! And I made these...
Apple Oatmeal Raisin Cookies!
So for about the past 2 months of my life I've been waking up at 7am... hanging out with 5th and 6th graders all day... then going to bed at 1am. Sounds like fun, right? Well.... it is!
Being a camp counselor these past few months has been so exhausting, yet at the same time I wouldn't trade it for any other summer job. Granted, you can't really bake when you're a camp counselor... but somehow I've managed to find a way! Like today!
These cookies are for my secret pal. What is a secret pal, you ask? Welllll it's just like what it sounds like. A friend that you do nice things for... while keeping it a secret. The ironic thing about my secret pal... is that he already knows who I am. So "secret" can pretty much just be tossed out the window... but it's okay b/c I'm pretty sure he'll still appreciate these!
For this recipe, I just took an oatmeal raisin cookie recipe and added granny smith apples. I made them bite sized too... and they're delicious!
Can't wait to give them to my "secret" pal!
Here's the recipe!
Apple Oatmeal Raisin Cookies
Ingredients
1/2 cup (1 stick) and 6 tbsp. butter, softened
3/4 cup packed brown sugar
1/2 cup granulated sugar
2 eggs
1 tsp. vanilla
1 1/2 cups all-purpose flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt (optional)
3 cups oats
1 cup raisins
about 1 cup chopped granny smith apple
Directions
Preheat oven to 350F.
Beat butter and sugars in large bowl until creamy.
Add eggs and vanilla; beat well.
Add flour, baking soda, cinnamon, and salt; mix.
Add oats, raisins, and apples.
Drop by rounded tbsp-fuls onto ungreased cookie sheet.
Bake for about 8-10 minutes.
I can't believe camp ends in 2 days... it's seriously been my life, 24-7, for what seems like forever now. I'm going to miss everyone at SEP so much! So these cookies are not only for my secret pal, but for my other camp counselor friends as well :). Love you guys!
