Leftover Easter Eggs?

What? Two posts in ONE DAY?!?

I know, I know, I've been baking allll dayyy ;)

Okay, so I'm procrastinating.... but it's Easter!! Annddd I'd rather bake than do my homework.

With that said... What are you going to do with all of your leftover Easter eggs?

Make Chocolate Chip Cookies, perhaps??

That's what I did!

Yes, I used hard boiled eggs to make chocolate chip cookies!!! Crazy, right?

I found the recipe on Cookie Madness, and decided to give it a try.

It was an interesting process, to say the least...

1. You use a food processor and "pulse" instead of "mix" or "combine"

2. Of course, you use a hard boiled egg instead of a regular, raw egg

3. The recipe makes only about ~15 cookies as opposed to the traditional 3 dozen or so

Besides that, the baking process is pretty much the same!

The result (of using hard boiled eggs to make a cookie) is a super fluffy cookie texture that is definitely worth all of the pulsing and intricate mixing.

Here's the Recipe!

Hard Boiled Egg Chocolate Chip Cookies

Ingredients

1 1/3 cups plus 2 tbsp. all-purpose flour

1 stick unsalted butter, cold

1/2 tsp. salt

1/4 tsp. baking soda

1/4 plus 2 tbsp. granulated sugar

1/4 cup brown sugar

1 hard boiled egg, shell removed

1/4 tsp. vanilla extract

handful of chocolate chips (to your liking!!!)

Directions

Preheat oven to 350F.

Combine flour and butter in food processor; pulse until mealy and course.

Add salt, baking soda, sugars, and hard boiled egg; pulse until mealy and course.

Add vanilla and pulse until mixture just begins to come together.

Remove from processor and dump in large bowl.

Add chocolate chips and mix (*I found mixing with my hands to be really useful here)

Shape dough into desired size and place on ungreased cookie sheet (you might see egg whites here!! They will disappear as the cookie bakes)

Bake for ~12 minutes (for normal sized cookies - larger cookies I would bake them for longer)

Hope this helps get rid of some of those colored Easter eggs! Or at least gives you some ideas!!
