R is for Revel Bars

If there is anything I miss about high school, it would be PEER.

Today I went to go visit, and was told I needed to bring something to eat that started with the letter R. This is not an abnormal request from PEER, seeing as though we do random, cool things like that.... all the time.

So I started thinking.... raisin cookies, cinnamon raisin biscotti, raspberry citrus bars, r....... revel bars?

I've never made them before (or really heard of them) so I decided to give them a try. They are basically oatmeal chocolate chip cookies, just in bar form. The process was a bit easier than making cookies, though, seeing as though you just pour the mixture in the baking pan and bake. They turn out really cool too :)

Revel Bars

Ingredients

1 cup butter or margarine

2 cups packed brown sugar

2 eggs

2 tsp. vanilla

2 1/2 cups all-purpose flour

1 tsp. baking soda

3 cups oats

1 14-oz can (1 1/4 cups) sweetened condensed milk

2 cups semisweet chocolate chips

1 cup chopped walnuts

2 tsp. vanilla

Directions

Preheat oven to 350F.

Mix flour, baking soda, and oats in medium bowl; set aside.

Set aside 2 tablespoons of butter/margarine. Beat remaining butter/margarine in large mixing bowl.

Add brown sugar; beat until well mixed. Beat in eggs and 2 tsp. vanilla.

Gradually add flour mixture to beaten mixture; set aside.

In medium saucepan, combine reserved butter/margarine, sweetened condensed milk, and chocolate chips.

Once melted, remove from heat and stir in walnuts and 2 tsp. vanilla.

Press 2/3 of oat mixture into bottom of ungreased baking pan.

Spread chocolate mixture over top; Dollop remaining oat mixture on top of that.

Bake for about 25 minutes.

It was really good to see everyone in PEER today. PEER is the reason I started baking 24-7... back in the days of high school when I baked cookies because I was stressed/procrastinating/would rather bake than do homework. I don't really miss those days very much, but I do miss the people that I used to bring the cookies too :)

With that said... this post is dedicated to the most PEERfect group/club/family there is :)
