Dark Chocolate Cherry Oatmeal Cookies
These are one my favorite granola bars.
So I decided to try and make them into cookies.

I think these might be my new favorite cookie. Dark chocolate and dried cherries are seriously a great combination.
All I did was take a recipe for oatmeal raisin cookies and changed it a little. Instead of raisins I used dried cherries, and added dark chocolate chunks (although chips would work just as well!). Yumm.
These cookies are easy to make and bake really well. I had no problems and could add everything right in the mixer.

Dark Chocolate Cherry Oatmeal Cookies
Ingredients
1 cup (2 sticks) butter
1 cup packed brown sugar
2 eggs
1 & 1/2 tsp. vanilla extract
1 & 1/2 cups flour
1 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. salt
3 cups oats
1 cup dried cherries
6 ounces dark chocolate chunks (about 1 bag; semi-sweet chips work just as well)
Directions
Preheat oven to 350F.
Beat butter and brown sugar; add eggs one at a time; add vanilla.
In a separate bowl, combine flour, baking soda, cinnamon, and salt. Add flour mixture to butter mixture until just combined.
Stir in oats, cherries, and chocolate.
Place on ungreased cookie sheet and bake for about 10 minutes (edges should be light brown).
Cool on wire rack.
Recipe makes about 4 dozen cookies.
