Caramel Walnut Chocolate Chip Cookies
Before I go back to school.... where there are friends, Arch's, Mellow, and Cav. man... I had to bake one last time because even though all those things that I absolutely love are there... there is no flour, sugar, chocolate chips, or a clean, working oven... :(
With that said... Caramel Walnut Chocolate Chip Cookies.
If you like chewy, chocolatey, nutty goodness then you will LOVE these.
Did I mention caramel?
All I did was take a regular chocolate chip cookie recipe and changed it a little. Instead of using chips I used chocolate chunks, and then just added caramel candies and walnuts. Mmmmm :)
This recipe is super easy. The only thing that is a little tricky is transferring the cookies from the cookie sheet to the cooling rack because of the caramel... it just likes to stick to the spatula sometimes... and the cookie sheet... and the cooling rack. All in all, they're just a little delicate until they're completely cooled.
And here's the recipe.
Caramel Walnut Chocolate Chip Cookies
Ingredients
2 1/4 cups flour
1 tsp. baking soda
1 tsp. salt
1 cup (2 sticks) butter, softened
3/4 cup sugar
3/4 cup brown sugar
1 tsp. vanilla
2 eggs
12 oz. pkg semi-sweet chocolate chips/chunks
15 caramel squares, each cut into 4 pieces
1/2 cup - 1 cup walnuts (depends how much you would like to add)
Directions
Preheat oven to 375F.
In small bowl, combine flour, baking soda, and salt; set aside.
In large bowl, combine butter, sugar, brown sugar, and vanilla until creamy.
Add small bowl to large bowl mixture. Then add eggs.
Stir in chocolate, caramels, and walnuts.
Bake for about 9 minutes on an ungreased cookie sheet.
So even though I am going back to school and am going to have to go back to studying... and less baking... that doesn't mean I'm going to stop sharing my favorite cookie recipes :) There just won't be as many sweet pictures. Oh well.
So long for now...
