Chocolate Marshmallow Cookies.
Gooey, chocolatey goodness.
I found this recipe on the internet while browsing for recipes using marshmallows. I changed it a little, adding a secret ingredient and drizzling chocolate-peanut butter on top. So what is this secret ingredient? Wouldn't you like to know... just kidding. I don't even know if it is that secret, but I added some instant coffee to make the chocolate more chocolatier :) I've read about adding instant coffee to enhance the chocolate flavor, so I thought I'd try it.
Anyways, since I had never made these cookies before, I didn't really know what to expect, but the recipe was pretty simple and easy to follow. Most importantly, the cookies turned out AMAZING.
Here is the recipe.
Chocolate Marshmallow Cookies
Ingredients
1 3/4 c. sifted flour 1/2 c. cocoa 1/2 tsp. salt 1/2 tsp. soda 1/2 c. butter 1 c. sugar 1 egg 1/2 c. milk 1 tsp. vanilla
1/2 tsp. instant coffee* roughly 36 marshmallow halves
Directions
Preheat oven to 350F.
Measure and sift flour. Mix with baking soda, salt, instant coffee, and cocoa in small bowl.
Cream butter and sugar. Add egg, and vanilla and beat well.
Alternately add flour mixture and milk until well blended.
Place cookies about 1 inch apart on ungreased cookie sheet and bake for 8 minutes.
While cookies are baking, cut roughly 18 marshmallows in half.
Once in oven for 8 minutes, place marshmallow halves on cookies then bake for 2 more minutes.
Place cookies on drying rack to cool.
*Makes about 36 cookies
After I made the cookies, I felt like they needed something a little extra. I decided that I was going to melt chocolate and drizzle it over the cookies, but just my luck, I had no chocolate chips. What I did have, though, were peanut butter swirled chips... so I figured those would work just as good :)
All I did was melt the chips in a double boiler, then drizzle the chocolate over the cookies. If you don't have a double boiler, just place water in a pot on the stove, and use a bowl that fits on top of the pot (make sure it can't fall in) to melt the chocolate.
Voila. A double boiler.
After everything, the cookies were a success.
