What do I do when I am bored/need to waste time/have nothing better to do? Bake cookies, of course!
Which is what I did today. It took a while to figure out what to make, but after I realized I didn't have any chocolate chips or oats, and it was recommended that I make sugar cookies, that is exactly what I did :). I love these cookies. Every time I make them I literally get the cold shoulder if I don't leave any extra in the house.... but this recipe makes 10298 cookies, so there is always plenty extra. Okay, not 10298 cookies but seriously like 5 dozen.
And here it is :)
Sugar Cookies
Ingredients
1 cup butter, softened
1 ¼ cups sugar
1 tsp. baking powder
¼ tsp. salt
1 egg
1 tsp. vanilla
2 ¼ cups all-purpose flour
Directions
Preheat oven to 300F.
Beat butter in a large bowl with an electric mixer on medium to high speed for 30 seconds.
Add 1 cup of the sugar, baking powder, and salt.
Beat until combined, scraping side of bowl occasionally.
Beat in egg and vanilla until combined.
Beat in as much flour as you can with the mixer.
Stir in any remaining flour.
Shape dough into 1-in. balls.
Roll balls in the remaining ¼ cup sugar.
Place 2 inches apart on ungreased cookie sheet.
Bake for about 15 minutes or until tops are slightly crackled and sides are set (do not let edges brown).
Transfer cookies to wire racks and let cool.
